One of my favorite breakfast of all time. I make it when there is nothing else to eat but one lonely banana hanging out in the kitchen. I always have chickpea flour as a staple in my gluten free kitchen. But I have to admit that mostly I eat it with fruit or berry preserve but it goes really well with fresh fruits and berries. I am not much for a sweet tooth so I skip the maple syrup but you go ahead and enjoy yourself.  Let me know what you think of them.

4 ingredients including water!! ( You can use plant milk but it comes out better with water. Go figure.

Whisk water and banana mash well together.

Mash banana really well. I often whisk banana by itself after mashing.

After mixing in dry ingredients let the batter rest. That’s what makes these pancakes fluffiest ever.

I like to serve it with fresh fruit and maple syrup or fruit preserve but that adds more calories. Sometimes I eat these pancakes as is or add some toping
