Spicy Veggie Chickpea Flour Pancakes

If I had to choose food that I had eat everyday these pancakes would be it. You can change vegetables (zucchini, cauliflower, green onions, green beans or asparagus РI tried them all) and you have a different pancake. I love to eat them with hummus, saut̩ed or grilled vegetables, salsa or pico and spicy coleslaw goes well with it too. Sometimes I just eat it plain without fork or plate. I often time put half of the batter into the fridge for next day. Please let me know what you think of them.

Spicy veggie chickpea flour pancakes

These pancakes are great for snacking or for a meal. I eat them for breakfast, lunch or dinner, or all three. Great veggie and protein packed dish.

Ingredients
  

  • 1.5 cups besan (chickpea flour)
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 tsp turmeric
  • 2 tsp ground cumin
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper more if desired
  • 0.5 cup onion, roughly chopped
  • 0.5 cup red bell pepper, roughly chopped
  • 2 cups broccoli or any other vegetables like cauliflower or zucchini
  • 1 handful cilantro use parsley if cilantro is a no no
  • 2 cups water
  • 1 tbsp olive oil or any oil

Instructions
 

  • In food processor rice veggies with the blade
  • Mix riced veggies with water and oil
  • Mix all dry ingredients together in separate bowl
  • Combine flour with veggies mixture
  • Cook in non stick skillet 1 cup at the time
  • Flatten and spread pancake with the bottom of the cup

Notes

You can eat this pancake as is or with hummus or vegetable spread. They go really well with avocado and salsa or fresh pico de gallo. So the filling adds extra calories for your spicy chickpea pancakes and makes it into hearty meal.
